Bikini Recipe
Yields 10 people
To make the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Put all the items into a pot, heat until it reaches a gentle boil, stirring to dissolve. Next, take off the stove and leave to reach room temperature entirely. Pour into an sterilised bottle, seal and store in the fridge, it will last for up to four weeks.
Preparing the Cocktail Base: Combine all the liquids into one large bottle, leave to sit for an hour, then pass it through preferably using muslin, so it's perfectly clear.
When ready to serve: Add 85ml of your premix into a mixing glass packed with ice, and agitate gently for one minute to cool it down. Filter into a cold coupe glass or equivalent, decorate with some cranberries and finish by giving it a quick spritz with the mandarin essence over the top.
